My appaloosa horse was out in the pasture today and get some pretty nasty looking bites.
There are three of them (right where the saddle sits!) give or take a few the size of baseballs. The skin is not pierced but they are bald, sore, and tender and he has pink skin.
Will the coat regrow normally? How long will it take? Will I know how to ride him, and if so how long should I wait?

It will take probably around a month to completely regrow to the length of the haircoat surrounding it. I would give him a couple days sour to make sure his back isn't sore in the past riding him again. One thing that does help keep hold of skin healthy and protected (especially in summer, but it works surrounded by winter too) is to smear Vaseline over the exposed skin. Be aware that it does catch a TON of dirt, so the surrounding hair will be dirt colored until you can bequeath a bath (or it sheds out, since it's getting close to spring).
To help evade such horrid bites in the future, you could consider putting your horse out next to just a fly sheet to protect him a little more, IF i.e. safe in your pasture and IF it's impracticable to remove the bully horses.
